Red meat: For the purpose of acutabove.net; red meat means beef, sheepmeat and goatmeat. 

Salmonella: Salmonella are pathogens which cause food poisoning, typhoid, and paratyphoid fever in humans.  This strain of bacteria can enter the human system through contaminated water or food. 
Sanitation: Sanitation is the formulation and application of measures designed to protect public health. 
Secondary Cuts: Secondary cuts are non main primal cuts.

Staphylococcus:
Staphylococcus is group of bacteria, familiarly known as Golden Staph, that can cause a multitude of diseases. Staph bacteria can cause illness directly by infection (such as in the skin) or indirectly through products the bacteria makes such as toxins responsible for food poisoning and toxic shock syndrome.
Stock rotation: Stock rotation is a practise, used in retail, of moving products with an earlier sell-by date to the front of a shelf, so they get picked up and sold first, and of moving products with a later sell-by date to the back.
