E.coli: Is a strain of the bacterium Escherichia coli and a cause of food- borne illness.
Finished: Once cattle reach market specifications and are ready for processing, they are described as 'finished'. Cattle can be either grass or grainfed.
Foodservice: Foodservice is a term used by MLA to encapsulate all areas of the hospitality industry responsible for cooking and serving red meat to diners.
Fresh meat: The term ‘fresh meat’ includes all meats which have never being processed, cured or frozen in any way.
Grade score: The combination of fat and muscle scores used in assessing the quality of an animal. Gives an indication of the quality of the carcase.
Grainfed: An animal which has been fed on grain in a feedlot for a minimum of 70 days. Also used to describe the carcase when it is being sold.
Grassfed: An animal which has been fed on pasture (grass). Also used to describe the carcase when it is being sold.
Hogget: Castrated male and female sheep with no 'ram like' characteristics and up to two permanent teeth.
Hygiene: Standards of personal grooming which have effect on individual health.
